Ingredients:
- 2 Salmon fillets
- 1 tbsp sweet chilli sauce
- 2 tbsp Teriyaki sauce
- 1 tbsp vegetable oil
- ½ lime, juiced
- 150g stir-fry vegetable pack
Optional serve with:
Fresh red chilli
Sesame seeds
Methods:
- In a bowl, place the salmon fillets in and marinade in sweet chilli sauce, teriyaki sauce and lime juice for 20 minutes.
- Heat a pan with oil and place the salmon fillets in. Cook for 4 minutes on each side.
- Once cooked, place to the side and cover to keep warm.
- In the same pan, fry the vegetables for around 3 minutes depending on how crunchy or soft you want your vegetables.
- Plate up the vegetables and top with the salmon fillet. Add some chilli if you like a kick of heat and a sprinkle of sesame seeds.
